Cucumber-Tomato Salad
Yield: 4 Servings
INGREDIENTS
1 seedless cucumber, sliced
½ small onion, thinly sliced
2 cups small tomatoes, cut into quarters
¼ cup oil and vinegar dressing, I prefer Newman’s Own Olive Oil & Vinegar Salad Dressing
½ teaspoon lemon zest
1 tablespoon freshly squeezed lemon juice
Salt and freshly grated pepper to taste
PREPARATION
Stir together cucumber, onion and tomatoes. Add olive and vinegar dressing, lemon zest and lemon juice. Toss to coat and salt and pepper to taste.
