Comfort Food for Winter Chills

For many parts of the country, the month of January is the perfect comfort food month. Often, we are outside weathering the elements, so when we come indoors, nothing seems more inviting than something warm and substantial to warm us up.
It’s during that time of the year, that I think of hearty,filling soups. One of my favorites is a variation of a traditional potato soup found in Ecuador. It’s called “locro soup” and is prevalent in the Sierra region of Equador. Traditional locro soup can be either egg based (Locro de Huevo) or cheese based (Locro de Queso). I have adapted the traditional locro recipe and created Ecuadorian Potato Soup, my version includes both eggs and cheese. It’s rich and creamy and chock full of potatoes, corn, green onions, eggs and cheddar cheese.
