“March Madness”
“March Madness” is in full swing. We’re down to the “Sweet Sixteen” and hopefully your favorite team is still in the “hunt” for the national championship. Here’s a trio that will satisfy your hungry guests, along with a sweet snack. All can be made ahead of time and are delicious.

We all have our favorite appetizer recipes, but for me the Pan Fried Vidalia Onion Dip is the best. Since Vidalia onions are seasonal, feel free to substitute any other sweet onions that are available. The caramelized onions in the dip give it a deep, rich flavor and the cayenne pepper a bit of a zip! Serve with pita chips, crackers and other crudités. It’s even better if you make it the day before as it gives it time for all the flavors to meld.

If you like blue cheese, this is a great dip to serve with all kinds of veggies and crackers. Pile the dip into a carved out red cabbage for a festive touch.

Finally, what’s a party without some pizza. Don’t order out, make your own! They can be made ahead of time with any of your favorite toppings. My favorite is basil and fresh Mozzarella. Pop them in the oven when the half time show starts and before the 3rd quarter starts, you’ll have fresh and delicious pizza.
