Mom’s Birthday Celebration

My Mom is celebrating her 83rd birthday and going strong!  I’m going to make

 

her a special meal and invite over family to celebrate.  One of her favorites is Roast

 

Pork Tenderloin with Gorgonzola Sauce paired with some great smashed red

 

potatoes laced with garlic and and a Toasted Walnut, Green Apple and Gorgonzola

 

Salad with a raspberry vinaigrette. A great meal that takes no time at all to

 

prepare!

 


The entire celebration will be capped off with a wonderful Toasted Coconut Custard

 

Cake.  The recipe was featured on Bobby Flay’s “Throwdown” series and the toasted

 

coconut really gives the cake a great flavor and texture, different from the

 

traditional coconut cakes that you may have made in the past.  Each layer is filled

 

with a coconut custard filling, frosted with buttercream frosting and sprinkled with

 

toasted coconut. 

 

 

If you’re crunched for time, substitute a white cake mix for the homemade version,

 

then add the coconut custard and frosting.  It’s a time saver and still tastes

 

delicious.  Definitely worthy of a special birthday celebration.  Happy Birthday
